Instant Pot Fresh Tomato Sauce



One of my favorite things to make is homemade tomato sauce. I love using fresh ingredients and creating a delicious, flavorful sauce. This Instant Pot Fresh Tomato Sauce is so easy to throw together and it tastes amazing! So much better than marinara sauce from a bottle. Plus, when we use the Instant Pot, this sauce is ready in 10 minutes! There is no reason not to make it at home! Make it with me!







The secret to this Instant Pot Fresh Tomato Sauce is a couple of ingredients; roasted garlic, fresh basil leaves, and parmesan cheese. First, the roasted garlic! Roasting garlic is a great way to add a new flavor element to this sauce. It is not necessary, but it sure makes this recipe even more delicious. Simply wrap the garlic cloves in tin foil and bake in the oven for 30-45 minutes, or until the garlic is soft. When it is finished roasting, the peels will slide right off and the garlic is ready to use.





Fresh Basil! Using fresh basil in this sauce really brightens it up! You can substitute the fresh basil leaves for dried, but it wont give you that same flavor. If possible, fresh is best!




Parmesan Cheese! We are talking all about flavor today and adding parmesan cheese right there into the sauce brings another element of flavor to this dish! You can do one of two things, throw your leftover rind into the sauce and fish it out after it cooks or add a cup of shredded parmesan right there to the pot.

Instant Pot Fresh Tomato Sauce 
Yields 8 cups

INGREDIENTS:
2 tablespoons olive oil
4 cloves garlic, roasted
1 medium onion, diced
1/3 cup mushrooms
2 bell peppers, diced
1/4 cup fresh parsley, chopped or 2 tablespoons dried
2 1/2 tablespoons Italian seasoning blend
2 teaspoons salt 
8 fresh basil leaves, chopped 
8-10 roma tomatoes, medium sized
8 ounces tomato sauce
6 ounces tomato paste
1/2 of a rind from a parmesan cheese wedge, or 1 cup shaved parmesan 


Set the Instant Pot to Saute. 

Add the olive oil, garlic, onion, mushrooms, and peppers. Saute for 2-3 minutes, until onions and veggies start to wilt. Stir in the fresh parsley, Italian seasoning, and salt. 

Next, add in the basil leaves, tomatoes, tomato sauce, tomato paste, and parmesan cheese. 

Lock the lid and set the pot to manual pressure for 10 minutes. Make sure the valve is set to seal. 

When finished cooking, let the Instant Pot natural release for 10 minutes. Release remaining pressure and remove the lid. 

With an hand held immersion blender, blend all the ingredients together until smooth. You can also add the sauce to a blender and blend on high until smooth. 

Serve right away or refrigerate for 2 weeks.
