Loving this tasty Sweet Potato Pie Latte lately! Its so simple and really hits the spot when I’m craving something sweet.
Sweet potatoes are a rich source of vitamin A, potassium, and fiber. They’re also high in vitamin C and beta carotene which means they’re great to consume at this time of year to help boost your immune system!
Sweet Potato Pie Latte
INGREDIENTS:
- 1/2 cup canned coconut milk
- 1/3 cup steamed sweet potato, skin removed
- 1/4 cup water
- 1 scoop collagen peptides (optional)
- 3 tablespoons hemp hearts
- 1/2 teaspoon 100% pure maple syrup
- 1/4 teaspoon pumpkin pie spice
- nutmeg, for sprinkling
INSTRUCTIONS:
- Add the coconut milk, sweet potato, water, collagen, hemp hearts, maple syrup, and pumpkin spice to a high powered blender.
- Blend on high for 4 minutes or until the mixture is smooth and steaming.
- Serve in a large mug with a sprinkle of nutmeg.
Note: if your blender does not have the ability to make things hot, blend the mixture until smooth. Then warm in a sauce pan on the stove top over medium-high heat.
