Pina Colada Fruit Salad

This Pina Colada Fruit Salad is the perfect salad for summer! It has all of the sweet, Hawaiian flavors that everybody loves! It comes together in a matter of minutes and you can make it ahead of time! Chunks of pineapple, mango, and strawberries with fresh oranges, blueberries, and bananas make this salad so fresh and flavorful! Keep reading to see my secret ingredient! Make it with me!

CREAM OF COCONUT! This cream of coconut is what makes this salad especially delicious! This is what brings the Hawaiian Pina Colada flavor to this salad! It's a sweetened coconut cream that is used in mixed drinks but it doesn't contain any alcohol! You can find it at most grocery stores, but if you want, you can shop it on Amazon using the link below!

This recipe is great to throw together when you are in a time crunch! You can also make it ahead of time if you need to! Just mix up the juices together in a bowl and the fruit in another and store in the fridge until you are ready to serve.

You can easily half this recipe to make less or double or triple it to make more! It's easy, customizable, and quick! If you want, you can change up the fruits that are added! Use what you have on hand if you need to! Other great additions would be grapes, raspberries, marshmallows, pomegranate seeds, or apples!

Pina Colada Fruit Salad
Yields 10 servings

1/2 cup cream of coconut
1/4 cup pineapple juice
2 cups pineapple chopped
2 cups strawberries sliced
2 cups mango cubed
4 clementine oranges peeled and sectioned
4 bananas sliced
1 1/2 cups blueberries
3/4 cup sweetened shredded coconut more or less to taste

Whisk the cream of coconut and pineapple juice together in a medium bowl. Set aside.
If serving immediately: Add all of the fruit to a large bowl. Add cream of coconut/pineapple mixture and coconut and toss to evenly combine.
If making ahead: Add all of the fruit to a large bowl EXCEPT bananas. Keep fruit bowl and cream of coconut mixture separate and cover each with plastic wrap and refrigerate. Before serving, drain any excess liquid from the fruit, then add bananas, coconut and cream of coconut mixture and toss to evenly combine.

TIPS:
*Cream of coconut is NOT coconut cream. It's a sweetened coconut cream. You can find it with the mixers at your local grocery store. It is a very common ingredient so if you can’t find it then be sure to ask for some help.
*Feel free to customize the fruit with your favs!
*You can also use canned or frozen pineapple, canned Mandarin oranges, and frozen mangos if you want to save time and prep! Taste will vary a little but it's still delicious! Allow frozen fruit to thaw before serving.

“For me, photography arrived like a storm after months of...

For me, photography arrived like a storm after months of drought, and I am still very thirsty.

Fine Art Photography by Giuseppe Gradella

“Giuseppe Gradella has a profound belief in memories and dreams.

Conscious that everything is layered over time, in the heart, in memory and that, sooner or later, it finds a way back to the light, to unveil itself, he thinks of photography as holding your breath, just under the surface, for as long as your breath lasts, then re-emerging to observe the world from a different perspective, one that is more aware.

In order for memory to speak to him, he arms himself with a lot of patience and an excellent bait that allows him to fish even where life’s flow is perceptible only to the eye, like under a sheet of ice.
Physical places and those that exist in memory, where life and dreams intertwine in a process of transfiguration and internal re-creation in which time is suspended.

In Giuseppe Gradella’s photographs, which deal with fashion, architecture and fine art, there is a constant juxtaposition between what is actually in front of the camera and what he has retained from his experiences, in a continuous study that becomes introspective self-critique.

Giuseppe lives and works in Mantua (Italy).”
