Lemon Protein Bites



If you can't already by now, I am a big fan of lemon! I love using lemon in my recipes. I am always making these protein bites for a healthy treat to snack on, and I decided I wanted to make a lemon flavored one. I'm seriously obsessed with these Lemon Protein Bits. Make it with me!






This recipe is light, freshing, and lemony! It's made with old fashioned oats, lemon zest, shredded coconut flakes, and coconut butter! I saw this Coconut Almond Butter at Sprouts and I just knew I wanted to use it as a base in my next protein bite recipe. It's delicious! But it can be expensive. You can substitute it for almond butter and it'll still be divine!





These protein bites save me on busy weeks! They are sweet, chewy, and totally irresistible. Plus, they are low calorie, high protein, so there is nothing to feel guilty about!




Lemon Protein Bites
30 bites
100 calories each

2 cups old fashioned oats
1 cup Coconut Almond Butter or Almond Butter
1/2 cup honey
1/4 cup shredded coconut
1 scoop vanilla protein powder
2 tablespoons lemon zest, about one lemon
2 teaspoons lemon juice or lemon extract
1 teaspoon vanilla
1/4 teaspoon salt

Add all the ingredients to a stand mixer. Mix on a low speed until all the ingredients are incorporated.

Using a cookies scoop, scoop into balls and roll until smooth.

Store in a container in the fridge for up to two weeks.








Baked Lemon Chicken




This baked lemon chicken recipe is perfectly juicy and tender, easy to make, and full of the best fresh lemony flavor. Dinner doesn't have to be complicated. This dish comes together in no time! It's fresh and healthy, and it's made with lemons, lemon pepper, and garlic powder. Minimal ingredients, big bold flavor. Make it with me!


Lemon is such a great flavor compliment to chicken! I love using fresh lemon in this recipe! I wanted this dish to be simple and easy enough for anyone to throw together on any night. I think I have achieved just that! One dish, less than 10 ingredients, and it's ready in under an hour.




Less than 400 calories per serving makes this dish healthy and delicious! It's even macro friendly!






Baked Lemon Chicken
Yields 4 servings
Per Serving 360 Calories / 32C / 30 P / 12 F /

4 chicken breasts
2 tablespoons lemon pepper
2 tablespoon seasoning salt
2 teaspoon garlic powder
1/2 teaspoon paprika
2 tablespoons olive oil
2 lemons, 1 juiced 1 sliced
2 cups cooked brown rice
2 cups broccoli, steamed

Preheat oven to 375.

Season the chicken breasts with lemon pepper, seasoning salt, garlic powder, and paprika.

Place chicken in a 9x13 glass baking dish. Drizzle with olive oil and squeeze lemon juice over chicken.

Bake chicken for 40 minutes. When cooking time is up, remove the chicken and top with two slices of lemon on each breast.

Place chicken back in the oven and bake for an additional 10 minutes, or until the center of the breasts reach 165 degrees.

When finished, serve over 1/2 cup brown rice with a 1/2 cup steamed broccoli.
