Healthy Chocolate Muffins




Eating healthy doesn't have to be boring! I love taking classic recipes, and turning them into a healthy, protein packed treat. If you like chocolate you’re going to love our healthy chocolate muffins! They’re sweetened with mashed banana and made with chocolate chips and cocoa powder to make them extra chocolatey and delicious. Make it with me!




These muffins are double chocolatey! They are made using cocoa powder and chocolate chips! I sweeten this recipe with bananas, maple syrup, and coconut sugar. You can also choose to add a scoop of your favorite protein powder to the muffin batter for an extra protein boost!






I like to bake these muffins straight in the tin. You are welcome to use muffin liners if you would like! Just make sure to grease the pan and the muffin tins if you choose. My favorite cooking spray is the Kirkland brand from Costco! 









Healthy Chocolate Muffins
Yields 12 muffins

2 eggs, large
1/2 cup maple syrup
3/4 cup almond milk, unsweetened
3 tablespoons coconut oil, melted
1 teaspoon vanilla extract
2 bananas, mashed
1/2 cup unsweetened cocoa powder
1.5 cups white whole wheat flour
½ cup coconut sugar or sugar alternative
1 teaspoon baking soda
1/8 teaspoon salt
1 scoop protein powder (optional)
1/2 cup chocolate chips

First, preheat oven to 350ºF and prepare muffin tin.
To the stand mixer, add the eggs, maple syrup, almond milk, coconut oil, and vanilla. Mix well. 
Mash two bananas and add to the wet ingredients. 
Next, add the cocoa powder, whole wheat flour, coconut sugar, baking soda, salt, and optional protein powder into the mixing bowl.
Fold in the chocolate chips.
Fill each muffin about 3/4 of the way full. Bake for 15-20 minutes or until the center is fully cooked.
Let cool for 5 minutes and then remove from the muffin tin to continue cooling.







Healthy Poppy Seed Muffins





One of my favorite muffin flavors is poppy seed! I decided to turn that delicious flavor of muffin into a healthy option! These muffins are made with whole wheat flour, mashed bananas, cinnamon, and poppy seeds. Plus, you can add additional protein powder to give it an extra boost! Make it with me!







These muffins are healthy and delicious! Plus, they are super easy to make. All the ingredients in this recipe are made with nutritional ingredients that make the muffins super flavorful and extra yummy!





For this recipe, I used whole wheat flour. You can use any flour alternative that you have on hand! Coconut flour, almond flour, or even regular all purpose flour will do. Same goes for the coconut sugar. You can also substitute splenda, honey, or sugar in the raw.





Adding bananas to this recipe give the muffins extra moisture! The banana flavor is not super strong.
